Anni Townend talks to celebrated Chef, best-selling author and low-carb campaigner, Giancarlo Caldesi, who is on a mission to help people combat type two diabetes to live a happier, healthier life. 

Born in Montepulciano in rural Tuscany in the early 50s, Giancarlo came from humble roots, growing up in a farming community.  He reflects on this “formative” period and how it has impacted his life, recalling that from a young age he was subject to violence, heartache and extreme challenges.

He has been on a long journey since then, with a varied career path that has taken him from the Italian Army to London where he has launched renowned kitchens for many brands, including his own Caldesi establishments.

Now, together with wife and business partner Katie, Giancarlo is a successful and influential entrepreneur. They manage two popular Italian restaurants, have written a number of cooking and lifestyle books including the Amazon best-seller The Diabetes Weight-loss Cookbook. They also run a cookery school, regularly appear on TV and have two children together.

In this fascinating conversation, Giancarlo opens up to Anni about his transformational journey and why a proud pasta loving Italian became a low-carb crusader.
